I have heard of DobuDish before, but completely forgot about it while
evaluating tools for JavaHelp :(
For now our process works fine, but I think I'll give DobuDish a try
in the next release. XML seems a better choice as source format than
HTML. So you can apply styles in the transformations. At the moment we
use different CSS files.
As a editor for docbook files I like oXygen (http://
www.oxygenxml.com/). I used the XML Author edition.
