What I've heard from people who've tried it is an instinctive aversion to the UI. There's a cross-platform "UI smell" that Mac zealots have learned to seek out and destroy dating back to the bad old Swing days. People want an Xcode competitor to keep Apple honest, especially given high levels of frustration with Xcode 4, but AppCode is going to have a hard time even getting a fair shake.
