My first answer would be "change job" (but if I remember well you just did that).

Closer to the topic, There are many things to say about the goodness of MVC, but I'd first focus to the following point. The argument "too many classes" is crazy. My projects have a lot of classes, each one well focused on a single responsibility and thus very small. If your manager is advocating designing with a few, large classes, the problem is with fundamentals best practices and IMO there's nothing to do (but changing job).
