For purely client-side stuff, my favourite stack right now is:

http://twitter.github.com/bootstrap/ + http://backbonejs.org/

As for the underlying REST service, the world is your oyster. Almost all
Java web frameworks have an offering in that space, and even over here in
Scala-land we're spoilt for choice with scalatra, lift, play-lite,
unfiltered, finagle, bowler, blueeyes, circumflex and spray.

For server-side templating, I think you'd really struggle to find a cleaner
solution than either Play or James Strachan's Scalate framework.
