With the message open:

ALT-T  for the Tools Menu
Down arrow once to hear "Ad to address book."

This is a sub menu with a couple of choices so make your choice.

Thing is though you are probably using a spam filter of some sort if you have a 
spam folder which may be filtering addresses out regardless that they are in 
your address book. This may need different action unless your version of 
Outlook Express is newer than mine and has a new feature.
