In Excel 2003 this is very easy.
To add a worksheet simply go to the Insert menu and select worksheet.
To rename a worksheet go to the format menu and select sheet and then rename
from  the next submenu.

I am afraid I do not know how to do this in the awful Office 2007 version of
Excel. You can probably do this by lots of tabbing and shift tabbing through
ribbons,  but someone else will have to help with this if that is what you
have got.

Hi, Kathy.  I think you can create a new worksheet with control N like you
would in a word processing program.  If you want to rename a worksheet you
can do it in one of two different ways:

1.  If the old name is still in the title cell, you can type the new name
and it will overwrite the old one.
2.  Hit f-2 which will take you to edit.  Then you can delete letters and
type the new name of your worksheet.
