For Windows Explorer or My Computer, while one of them is on screen go
to the View menu and choose List.

If you mean in the Open dialogue in Microsoft Office applications, there
are a variety of methods depends on the version of Office you have.
Here's one way - get the dialogue on screen and then:
In Office 97, press Alt + 5
In Office 2003 press Alt + 6 six times 
In Office 2007 press Alt + 5 six times

I'm afraid I don't have Office 2000 or 2002 on my PC, but I wouldn't
mind betting it will be something similar in both of them.
