Probably the most comprehensive guides on using JAWS with Word are written by 
CathyAnne Murtha. I'm not sure if she still has guides going back to Word 2010 
and 2007, but you could Google to find out. There will be a charge. Keep in 
mind that most commands are Microsoft's, but JAWS does add other significant 
ones.
