In Outlook 2003 you can export all of your Outlook contents to a PST file. My one tip for doing this is to begin by using a Control+y to move to the level 0 of your Outlook Folder list. Now go to File and arrow down to Import/Export. Follow the prompts. You want to Export the contents to a *.pst file. You will need to select where you want to save the file you are creating. I usually do this to the desktop or to MyDocuments, and then copy it to where ever I am saving my files for storage.
Once you are back up and running, you will need to import the PST. If you have a lot of folders, or a lot of info stored in these folders, both the exporting and importing process can take a while.
