Arianna, If you are running JAWS 10, there is a DAISY book you can get. Go to the JAWS help menu, choose Check for Updates, and you will find all the DAISY Books you don't have installed. One of them is titled Office 2007 with JAWS DAISY Book. This is a good place to start.
