I'm assuming that you want to keep just the text, and not the actual hyperlink. This is how I do it in Word 2003. Move to the hyperlink that you want to remove. Press the application key and arrow to something like remove hyperlink. If this does not work, then select the hyperlink before using the application key to remove the hyperlink.
