That ispretty much what I did too. I just like pressed keys to figure out how to get to the menu's and then tried to learn what group things were in.

While there is a learning curve to Office 2007, I don't think it is a big
one.
The tutorial mentioned before is available.
But here's what I have done without the tutorial.
Give yourself a couple hours when you aren't trying to get a particular
job done.
Open a document or make  a short new one.  Then explore.
First choose Alt f, for the File menu.  Then tab or arrow through the
options.
Whenever you come across one that you need to know, make a note of it.
Keep this list of notes as a separate document.
Then choose Alt E, for the Home ribben menue.  Tab through the options
there, noting on your list, the things you want to remember for future
use.
As you go through, listen to what JAWS tells you about the key
combinations for various commands.  This is what you want to take notes
on.
After you finish with  the Home menu, Choose Alt E again, but rather than
tab, use the right arrow.  This will bring you to the next ribbon menu,
which you can explore by tabbing through the options.
You can explore each of the ribbon menus this way.
You will learn the most common key combinations quickly, and for those
that you use less often, your document with all the notes is the first
place you will turn.
Note also that many of the commands you learned in previous versions of
Office will work in 2007.
For example, Alt T S, will bring up the spell checker.
Alt O F will bring up the font menu
Alt O C will bring up the columns menu
I'm sure that with a couple hours of exploring, you will feel much more
confident.
