I have had similar experiences when using a laptop and projector with Excel.  
The control+shift+s key didn't pull up a list of spreadsheet tabs.  After 
discussions with our company techs and Freedom Scientific, it seems this 
happens because of the way the video card handles the connection to the 
projector.  
At the time I encountered the problem, there was  nothing that could be done.  
For Excel, I found a sort of work around.  Good luck.
