The best method, perhaps, is to add a JAWS dictionary entry (into the 
default JDF - insert+d, control shift d, alt-a) - for the © symbol, and 
then add into the replacement field, copyright. Save changes - control 
s. Alt-F4. Job done.

Press Insert+4 for the symbol to print list and arrow down.

The other way to change how JAWS speaks the copyright symbol © is to 
go into Settings Center (or Quick Settings), and do the usual things 
there.
