ok, 
1. not true that windows mail is not on windows 7 computers (I don't know
about 8 machines yet), but... there were some troubles with resetting it to
run in the past though it seems to work fine if you install (or make sure
it's already installed) service pack 1, then reset windows mail to run and
all is good.
** large note here, you will be resetting things in the registry to do this,
so if you don't feel comfortable with that, forget about windows mail!. 
2.  yes windows 8 is being worked on, and should be out in the relative
future, its got some shaky spots, is designed for touch devices though it
will work on more standard machines, and does have improvements to narrator
which make it far superior to what it was. but I'm going to be waiting at
least a year before I install it after it becomes regular market available,
usually by then many of the kinks have been worked out of the system and the
full panoply of adjustments and such have been handled by experienced
computer guru's and so its less of a headache for us computer underlings. 
3. other Email clients that are being used with windows 7 include the
following:
windows live mail, the newest one, or some prefer the previous one (I can
mail folks the previous install file if needed).
* some like it some hate it, its a matter of choice as far as I am
concerned, but I tend to look else ware for mail clients.
Eudora; version 7.X will run on windows 7, and there is a last grant from
the company that was maintaining it (they no longer do) of a free license
that can be installed to get rid of the annoying "buy me" message in the
"free" version which is what you download. I have info on all of this
available.
Mozilla thunderbird is the next one that is accessible on windows 7, runs
good, can be a bit confusing until you get used to it, but is well known on
most of the lists and help is available from Mozilla or most lists.
