you have to set your playback for audio to one sound device, sound card, USB
sound card, USB headphones, or USB Speakers, then set and do the actual
recording from another device, say set your music to play off the onboard
sound card and record off of it by playing music and telling Audacity, to
record from the players device, and not the one jaws is using

one note, I got a SoundBlaster Audigy here somewhere, it sounds better than
the computers stock sound card, so if I went to split things like this I
would play jaws out of the computers card and run my sound out the Audigy,
eh?

So here comes the real question!

Is it possible to record something using lets say, audacity, have jaws come
out of the headset and not be heard during playback of the recording?

All I can really suggest is review your choices very carefully.  I have a
headphone choice without an additional card plugged in because it is just on
my built-in card.  Choosing it doesn't actually switch to the headphone
jack, it just stays with the speakers.  Once I connect my bluetooth headset,
I get another headset choice and it works as expected.
