So long as the process involves using JAWS to accomplish the task in 
question then it is fine.

I'm not sure that this really is a Jaws related question.  However, 
conversion of Audible formats, except as provided for on the Audible web 
site, violates the license underwhich you obtained the book.  Formate 
Factory will not remove or defeat the copyright protection in Audible books.
