Here's what I do. In the, to, box, I start typing the name of the person I am emailing. If that name doesn't come up after a few letters, then I use the up and down arrows to look for it. If the person is in my contact list or if I have ever sent an email to that person it should show up. When it does press tap to go to the next field. If I can't find that person that way, I know I have to put them in my contacts list. Then the next time I want to send them an email, their name will come up.
