Just to add another step which I'm sure David already knows but probably
forgot is that page up or down also works during a say all. If memory serves
this only changes the speed temporarily.

To temporarily increase or decrease the speech, press ALT+CTRL+PAGE UP or
PAGE DOWN. To change the speech permanently, press ALT+CTRL+WINDOWS+PAGE UP

Rather than going into voices and changing the speed I'm sure there is a
hotkey to do with page up and down to change speed of jaws.
I can't seem to remember what it is?
