I'm finding tables, non-uniform or otherwise, are an increasing feature in email. I have two ways of handling them. The easiest is to copy the entire message field with control-a, control-c, then paste into Notepad. From here, I typically copy and paste the result into a Word document. Somehow Notepad not only removes the table structure, but also keeps the text in a logical sequence.
Second, as Karen suggests, you can take the option of reading the Web version. If you're using IE, you don't need that option to appear in the email message. What I do with Outlook 2010, with the message open, is press alt-h, then a, then v. After a moment or two, the message appears in an IE window. Note that complex messages with tables can take a few moments to open, so best to wait until JAWS comes up speaking before typing this sequence. If this isn't clear, please ask me to clarify.
