On one set of documents I receive, I need to press the alt key before f, then 
I, e. the method isn't consistent document by document, but it's almost the 
same and it's fast.

It is also in the file menu so you don't have to manually find it with the Jaws 
cursor.
Alt + F then i then E.
If your office is like mine though the focus shifts and this doesn't work as it 
should so I have to press Alt + F then tab 3 or 4 times to get to the button.

Use the JAWS cursor to the top of the screen and there is a click to edit 
option I think, just around the toolbar area.
