I haven't looked at jbosside for a while because, as you said, it isn't the most intuitive environment to work in. The best JSP development environment available for eclipse is MyEclipse. Whilst it isn't free, you can download a 30 day trial and it only costs $30.
Alterntively, you could use the tomcat-ant tasks to enable rapid deployment of applications. PS. I;m sure I found a viewlet before for JBossIDE, but it seems to have disappeared into google's ether.
