I picked up a copy of the book JBoss at Work, A Practical Guide by Tom Marrs and Scott Davis, published by O'Reilly. This books seems to cover all of the areas that you mentioned. I used the chapter on web services to build a small EJB application with a web service front end, using XDoclets to specify EJB and web services information.
