OK.. for future readers it is a case of RTFCF (config files) To deploy my beans I commented out SecurityDomainJndiName in hsqldb-service.xml and uncommented the UserName and Password in the managed connection factory section..
This begs the question: Why was I getting the principal=null error with the JAAS config? How do I specify what principal to use?
