If you are using any sort of scripting system to build your packaging, like JBossIDE or ant, use any jar tool to unpack the actual .ear you are trying to deploy and then browse it to make sure that all your beans and descriptors and such are in their proper place.
I usually get the nullPointerException and ClassNotFoundExceptions when I screw up my packaging configuration.
