I think the only solution really is going to be for you to go through the getting started guide to see some example deployments working.
The two JBoss deployment descriptors need to be added to your META-INF folder in the jar next to the ejb-jar.xml. There are dtd's in the docs folder that describe the contents of these files. You can then use these files for mapping the table and column names.
