In ./bin/run.sh, set the JAVA_OPTS variable. See the slide title JVM Heap Tuning in http://www.jboss.com/pdf/jbworld/scaling_up_jboss.pdf for some suggested heap settings. You will probably have to adjust the settings to work best for your application, but you will have to gather garbage collection statistics first to do that.
