You can safely use dbforms tags ( I am not sure of Jakarta tags) with multiple tables. For each field you define in your dbforms-config.xml, you can use an expression tag to take care of column-specific calculations. For row specific logics, if you think its easier to do in the JSP, then that's good. DbForms give you the current row data in some variable, which you can use easily.
If you think you need logics across rows, then look at the interceptor; but that will make you almost writing simple JDBC code. You have to use postselect/update/insert interceptors to manioulate the data & store on the fieldValues, which you can retrieve in the JSP and use it. Any expert's comments ??
