It sounds like you have multiple questions.
If one of them involves conversion of email addresses from one form into
another and you're using sendmail, you'd probably be best off chatting
with me directly, as I'm in the middle of teaching myself how to do some
rather nifty stuff with sendmail.
As for the server itself, I always thought the virtual server section in
jabber.xml did just that.  Am I wrong?
