I'll just ignore the load balancing issue, but if you have packet
forwarding enabled at the company.com server, you can just forward ports
5222 and 5269 to jabber.sub.company.com, and use company.com in your
jabber.xml file, and everything should work.  (At least that's what I
do here, and it appears to have worked for the past few months.)
