The only thing you can use XMPP for in this case is call setup/session negotiation. There is no way that the incured overhead of encapsulating voice into XMPP will lead to a workable solution. The actual voice traffic will take place out of band. The negotiation itself can either be created anew or just encapsulate existing protocols like SDP.
