I'm not all that familiar with how Windows Messenger does the conversion, but I do know that you don't have to "make a room" and then go join it.
Windows/MSN Messenger does this as a by product of the way it is designed as when you chat with anyone it creates a "room" for you even if its just one2one, so it doesnt do any converting, it just simply invites any other people you want to chat with into that "room".
It would be a good feature for those migrating from Exchange Messenger and looking for as many comparable features as their previous solution.
I believe its already defined in the protocol as someone has already mentioned, so its just a matter of client and server developers implementing the full MUC protocol.
