You really are better off to start with an existing library (see http://www.jabber.org/web/Libraries#Java for some possibilities). XMPP doesn't exactly fit the JAXB model, since this protocol is essentially two continuous streams (inbound and outbound) of an XML (like) document.

Openfire is fairly compliant to the actual specifications (e.g. RFC 3920, 3921, and the various XEPs), so looking at its source code shouldn't be necessary to get connected to it.
