Fix inline-scan 2.3 logs and image override (#21)
* fix: container output with new inline-scan:2.3 container
* feat: allow override of the inline-scan container image
This allows:
* Use an older version in case a newer inline-scan release has some
compatibility issue
* Airgapped environments
