FWIW I set up a dashboard widget so I always see unresolved issues from that project on the Jira home page. Otherwise, you could subscribe to a filter. Just create a filter for unresolved issues filed in the last 48 hours that you aren't watching. It's not as good as actual notifications, but it should get the job done.
