I found a solution for my problem. The following I can assemble my scripts without leaking the passwords:

 
                                                                withCredentials([
        usernamePassword(
            credentialsId: 'my-secret',
            usernameVariable: 'USER',
            passwordVariable: 'PASSWORD'
        )
    ]) {
        withEnv([
           "USER=${USER}",
           "PASSWORD=${PASSWORD}",
        ]) {
           sh 'some-command $USER $PASSWORD' // single quotes for bash variables
         .....
