We did more investigation.
We used to start Jenkins with Tanuki Wrapper. To make sure, it's not a problem of the wrapper, today we startet jenkins direct: java -jar jenkins.war.
With the options: -Xmx512m -Xms512m
But starting some Jobs and clicking at the jenkins-sites in the browser caused again an outOfMemoryException. HeapDump was writen. It has 76 MB.
