The ListFiles class is not getting loaded. Probably not a bug in Workflow, but rather either a corrupted plugin installation, or some other error which may have been thrown earlier but not recorded in this stack trace (see JDK-8051847).
Did you try restarting Jenkins? Or running a new installation in a test $JENKINS_HOME to see if the error is reproducible?
I would recommend installing the Support Core plugin, which can be used to generate diagnostic bundles including richer information including a variety of log files. (Bundles can be attached to JIRA; just be sure to take a look through the included files to make sure there is no confidential information.)
