There have been a few recent reports of Java 8 related errors in Jenkins. I believe all but one of those reports are already resolved in the current Jenkins development version.
Even with that, my perception is that Jenkins with Java 8 is on the "bleeding edge". If you want to help the community by discovering new and interesting problems that are specifically related to Java 8, then it will be a great help. If you want a stable or production system, I'd wait a month or two while others discover issues and they are resolved.
