Jenkins indeed requires Java11 at least but it also allows to install any
addtional Java versions that are supported by the system the build is running
on. The page https://www.jenkins.io/doc/administration/requirements/java/
explains the Jenkins requirements for Java. If you experience the problems with
Java 8 then there are some configuration issues.
I have Jenkins installation with four different Java installed - each JVM has
its own installation folder ans I have defined for each of them a separate
environment variable. After that I'm able to select for the build whatever JVM
I've installed. Jenkins itself is running on JDK-11.0.7
