Hi Simon,
I am doing my final thesis which involves JESS and I have found the references 
supplied by "ejfried" in the documentation very helpfull. Especially "Expert Systems, 
Principles and Programming" by Giarrantano & Riley ISBN 0-534-95053-1 which is a good 
introduction to clips.

For Java "Thinking in Java" by Bruce Eckel is a good and inexpensive choice since you 
can download it for free from http://www.bruceeckel.com/. 
A usergroup style website for java questions also recommended by Bruce Eckel is: 
http://www.javaranch.com/index.html but there is an abundance of information, 
tutorials and code examples all over the web.
