That mysql definition is coming from somewhere.
Jetty doesn't have that hardcoded -

Nor does the c3p0 source -
https://github.com/swaldman/c3p0/search?utf8=%E2%9C%93&q=com.mysql.jdbc.Driver
At this point I think its time for you to grep all of the contents of your
WebApp (WAR), including the WEB-INF/lib/*.jar files, as well as everything
on your ${jetty.base} for that reference.
