"Fatal" is typically decided by the application; for some it may be deadly, for others something that can be ignored. Jetty logging does not have an ERROR level. Parsing the log lines you are interested in is one solution. Could be applied after the fact, or on-the-fly with a custom Jetty logger that you can easily plug in.
