You have come to the right place, we have all been where you are now.

I did a deep dig in my laundry/sewing/craft room not to long ago (actually a
couple of years ago and it has remained relatively organized or real easy to
get back that way).

Here is what I did.  I stood at the door and decided I wanted my stuff to
fit the space.  It was at that point literally "thigh high."  So I went
through the junk on the floor, one piece at a time and was totally honest
with myself.  No I would never finish the iris crewel picture, out it went.
No, I would never finish the cloth doll I had started for my son who is now
30!!  Just kept going one item at a time.  If I was going to keep it I took
it out to my dining room and living room and put it in a pile with like
items.  

Once the room was empty.  I bough containers for the various piles.  The
size was determined by the size of the pile.  I didn't permanently label
them, just slipped in a paper with general contents inside.  This way when
those things are used up I can easily reuse the container.  Mine are all
different sizes of the plastic boxes made by sterilite.  I did whittle it
down until it fit my space and I can honestly tell you that I don't miss a
thing.  And in fact can remember very little I threw out.  But I still love
the fact that I can go in and sew anytime I want and I can access what I
need quickly.  

I was even able to move in my two boxes of wrapping paper and now use my
work table to wrap presents quickly and efficiently.
