Addison, I no longer have Outlook 2007, but I replicated pretty closely what you describe in Outlook 2010 Contacts. I would try hitting CTRL+A, the Windows command for "select all," once you're in the e-mail address field prior to hitting CTRL+C to copy it. That's working for me, let us know if that works for you.
