To stop the pitch change for capital letters do the following:

Go into the Jaws window and press alt F. Arrow down until you hear the
Voices menu selection and press enter. You will hear Jaws say, Voice
Adjustment. Press enter. Now tab over until you hear Upper case pitch
change. I believe the default is 20%. If you want no pitch change
delete the 20 and type in 0. Tab to ok and press enter.
