My experience is that Adobe Pro doesn't work with JAWS or any other screen reader to edit documents. The only thing I was able to do successfully was to OCR a document that was an image only. I was able to access some of the menus and toolbars, but you can't select text accurately with JAWS. This is because JAWS uses the virtual buffer. Adobe doesn't actually know what text is selected as a result. Sorry for the bad news, but I think you may be out of luck. I hope to be proven wrong however.
