I am running Outlook 2010 and have it update automatically. I have not experienced the issue you shared yet. I just did a trial Escape and Ssave, and found the test email in the draft folder as expected. Running Windows 7 as well. I am curious if you can duplicate the condition using test messages sent to yourself. If so, then curious if using the File Save instead of the Escape and "Yes" selection would provide a viable workaround.

This afternoon, when it happened again, I even checked my drafts folder on the g-mail web site, under my personal g-mail account, and it was not there either. What makes this especially annoying is that I did not have this problem a month or so ago. I'm wondering if something has been updated so as to make this saving function less easy to perform?
