Once you have created the pivot table and added the category to row or column titles then you'll need to set the field settings to what you need.
Take a look at mrexcel.com. They have 5 minute tutorials that will help you. Shorcut keys: Select the data field then alt +n then enter twice. Then create the pivot table . Then f6 opens the pivot table settings select the category you wish to display then shift + f10 to set in the field then tab to the category button you just created and enter on that to set the field settings.
