Lots of programs have updates, and each of them can be disabled in a different way. Often times you have to find the program's preferences or options to disable updates, but it really is program specific.

The bigger question is whether turning off updates is a good idea. Many updates are released to address security issues with software, and not updating could leave you vulnerable. Then again, there are certain updates I try to kill because I'm concerned that the new version will not be accessible. So it's really a personal decision. The best thing to do is to figure out what kinds of things a program's typical updates will address, and then decide if you can live without those functions or features getting a facelift from time to time.

Then you're back to the question of how to enable or disable those updates, and again, that's a program specific problem. Google can often be helpful in this regard.
